Hello Beautiful. Yup, I am talking to you Friday. It is so nice to see you again. You really should come around far more often than once a week. Friday’s are a wonderful thing. Nick works a lot of weekends but luckily for me, he has had the past few Saturday’s off and that has made Friday even sweeter.
 
We so enjoy our weekends and it is no surprise that they largely revolve around food. Friday is for date night. Saturday is for brunch and Sunday is family dinner. I love family dinner. Everyone is all together and for a couple of hours it is as though we never grew up. There are 6 of us kids so when we were younger there were always a lot of seats filled at the dinner table. Our house looked like Thanksgiving dinner…just about every night of the week.

Now most of us have grown and we all are fairly busy but we try to have family dinner as often as we can. Our table has grown even bigger with spouses, kids, girlfriends and boyfriends….but I love it.

As the food blogger in the family I usually end up making up the dinner menu and let me tell you, this family can eat ! But it is summer so everyone is looking for lighter foods and trying to keep their summer bodies so I decided to whip up this lighter hot caramelized onion and bacon dip. Talk about comfort food! I served them up with Blue Diamond Artisan Nut Thins, which have the perfect amount of crunch! They are gluten-free, full of brown rice, quinoa and flax seed. Absolutely perfect for dipping.

This dip was a huge hit with the family. I started with two yellow onions and caramelized them till they were nice and sweet. Next I cooked up three pieces of good-quality bacon. I wanted the full flavor that bacon provides but you could substitute turkey bacon if you dislike pork or want a little bit of a healthier option. For the creamy element in this dish I used low fat cream cheese and protein packed greek yogurt. I love using greek yogurt instead of mayonnaise or sour cream. I promise you won’t even miss all the fat and calories. The decadent part of this dish is the Applewood Smoked Gruyere Cheese. If you can’t find the applewood smoked variety then you can use plain gruyere but I really love the smokiness that comes from the applewood.

My favorite part about this dish is that it is made in one skillet! After all the elements are added, you just toss it in the oven to bake until golden bubbly. Serve it up with some Blue Diamond Artisan Nut Thins and you have the perfect appetizer for Sunday dinner or just all by yourself (I won’t tell).
